That’s because the change won’t be fully set until the Settings app has been closed, though it seems more stable than in Ventura. You may notice the cursor changes back to its default color a couple of times while moving it around. You can keep picking new colors, or close that window and change the other color item. Once you’ve picked the color, the change should show almost immediately. There you’ll see the “Pointer outline color” currently set to white and “Pointer fill color” set to black. Once it opens, click the “Display” icon in the left sidebar, then select the “Pointer” tab on the right side of the app. Open the System Preferences App and click the “Accessibility” icon.
